Davio’s Welcomes Guest Sommelier Katie Salinas to Present Wines from Pio Cesare & DAOU Wineries
WHAT: Join Davio’s Northern Italian Steakhouse in Lynnfield, MA for a wine tour of DAOU Vineyards in Paso Robles, CA and Pio Cesare in Piemonte, Italy. Taste along with our host Katie Salinas as she guides guests through vintages from the best wine growing regions in the world.
DAOU Mountain is a terroir of remarkable equilibrium. There, the calcareous clay soil is comparable to Bordeaux’s Right Bank, while the buffered Pacific microclimate is similar to Saint Helena – a perfect confluence of elements. DAOU Mountain is blessed with extraordinary phenolic output, yielding some of the darkest, most deeply textured wines in the world. These wines are never acidified, as the ideal level of acidity comes naturally. DAOU Mountain is blessed with ideal conditions for Bordeaux varieties, most notably Cabernet Sauvignon.
Pio Cesare has been producing wines for 135 years and through five generations in its ancient cellars in the center of the town of Alba. The Pio Cesare winery was founded in 1881, by Cesare Pio. He was a very successful entrepreneur and was inspired to produce a small and select quantity of wines from the hills of Barolo and Barbaresco for himself, his family, friends, and customers. Cesare Pio was dedicated to the terroir of the Piedmont region and to producing wines of the highest quality.
