Since its February opening, Paolo’s — minutes off Route 1 in Saugus — has built a rep as a neighborhood gem with destination-restaurant vibes. Featured on Phantom Gourmet and in the Boston Globe in summer 2023, its contemporary dining room snugly seats guests in backlit church pews offering full-room views of whimsical decor, while the nine-seat bar serves locals and tourists cocktails and a loungey playlist under a life-size Sophia Loren.
